Honey bee cookies- nuse shugar cookie dough and shape into bees and then pipe chocolate on top for stripes

Hedgehog Slice

180g butter
2/3 cup milk
1 cup caster sugar
¼ cup cocoa
2 teaspoons vanilla essence
2 x 250g packet Arnotts Morning Coffee biscuits( scotch finger or milk arrowroot)
2 tablespoons desiccated coconut

Grease a 19cm x 29cm lamington pan and line with enough baking paper to cover the base and extend over the sides.

Combine the butter, milk, sugar, cocoa and vanilla in a saucepan. Stir over low heat until sugar has dissolved, then bring to the boil and remove from heat.

Place biscuits in a large plastic bag and roughly crush with a rolling pin. Tip the crushed biscuits into a large bowl, add the melted butter mixture and mix well.

Press the mixture firmly into a prepared pan Refrigerate until firm.
Icing:

1½ cups icing sugar
2 tablespoons cocoa
2-3 tablespoons water

To make icing, combine icing sugar and cocoa in a bowl and stir in enough water to form a spreadable paste.

Spread icing over slice and refrigerate overnight (this makes slicing much easier).

Use lining paper to remove slice from the pan and cut into small pieces to serve.

Makes approximately 30 pieces.
